Cranberry Orange Meatballs
INGREDIENTS
1 lb. ground beef
2 eggs
1/2 cup plain panko bread crumbs
1 small onion, grated
Zest of 1 orange
2 tbsp Worcestershire sauce
3 tbsp Maple Hill 2% Milk
1/2 tbsp dried rosemary
Salt and pepper, to taste
Cranberry Orange Sauce
1/3 cup freshly squeezed orange juice
1/3 cup brown sugar
1 cup fresh cranberries
1 cinnamon stick
1 tbsp cornstarch
1 tbsp water
PREPARATION
Instructions:
1. Preheat oven to 400F. Grease a 13x9 baking dish and set aside.
2 Add all ingredients to a large bowl and mix to combine. Scoop meatball mixture with a 1-inch scoop and roll into balls (makes about 20 meatballs). Add to greased baking dish.
3. Transfer to oven and bake for 15 minutes or until golden brown.
4. Meanwhile, make the cranberry orange sauce: in a small saucepan combine all ingredients (except the cornstarch and water). Bring to a bowl, then lower heat down to medium low and simmer for 10 minutes. Smush the berries as they cook. Whisk the cornstarch with 1 tbsp water until no lumps remain to create a slurry then pour into the cranberry mixture and cook until thickened (a few minutes).
5. Once meatballs are out of the oven allow to cool slightly, then pour over the warmed cranberry orange sauce and gently toss to evenly coat. Serve immediately and enjoy!
