We concocted this on a cold February morning, wishing for palm trees and sunshine. The full-fat coconut compliments the tartness of our Plain Blended Yogurt. We used frozen pineapple, but frozen mango or banana would work well too. Rum is optional (but recommended!).
1 cup chilled organic full-fat coconut milk
1 cup Maple Hill Plain Blended Yogurt
1 cup frozen pineapple
Toasted coconut chips
Blend the first three ingredients together until smooth. Pour into two 8 oz glasses, top with toasted coconut, dream of beaches, and enjoy.
