What is “Cream on Top” yogurt?

The “cream on top” of our yogurt is a layer of milk fat that rises as the yogurt cools and settles during the culturing process. This occurs naturally when milk is not homogenized or lightly homogenized. You may notice “clumps” of fat or a layer of yellow fat on top of your yogurt – this is the natural milk fat that is normally blended into the yogurt on fully homogenized products.
